Steak Pizzaiola
This is a fantastic and classic Italian dish with Neapolitan and Apulian origins. The concept of "Pizzaiola" is basically meat (usually inexpensive beef) in a red tomato sauce with garlic, olive oil, red wine, and other spices. In a sense, it's kind of like a stew, except with a zesty red sauce versus a brown gravy-like sauce. This is delicious and completely inexpensive to make. It is a great main dish that can be served with a thin cut pasta or even rice!
Recipe
Ingredients
4 boneless steaks (sirloin, ribeye or even chuck steak)
1 can crushed tomatoes
3 cloves of garlic, minced
1/4 cup olive oil (or enough to coat the pan)
1/4 cup red wine
1/2 tsp. red pepper flakes (more or less depending on preference)
1/4 cup fresh basil, chopped (dried is okay)
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Instructions
1. Season steak on both sides with salt and pepper.
2. Heat olive oil on medium-high heat in a deep skillet or Dutch oven. When hot, add the steaks and sear them for about 2 to 3 minutes per side, or until nicely browned. Remove them and set aside.
3. In the same skillet with the meat remnants (that part is gold so make sure you don't clean your pan), add minced garlic and red pepper flakes. This is the basis for the sauce. Sauté for about 1 minute.
4. Pour in the red wine to de glaze the pan, scraping up any browned bits from the bottom. Add the can of crushed tomatoes, basil, and parsley to the skillet. Season with a pinch of salt and pepper.
5. Let this simmer for 10 to 15 minutes or until it begins to thicken. Then return the seared steaks into the sauce, making sure they are engulfed.
6. Cover the pan and let the steaks cook for an additional 10-15 minutes or until they reach your level of cooked.
7. Serve hot and garnish with basil and chopped parsley.
