Tomato, Mozzarella and Basil Panini

This sandwich (panino in Italian) is a take on the classic Caprese salad or Margherita pizza in a sandwich form. It combines the delicious, fresh ingredients of Tomatoes, Mozzarella cheese and Basil, drizzled with Balsamic vinegar. This is perfect summertime lunch, especially grilled. Recipes Ingredients 1/2 cup balsamic vinegar 1 (8 oz.) piece of crusty bread, your choice 1 tbs. olive oil Roughly 12 basil leaves 5 oz. fresh mozzarella cheese, thinly sliced 2 medium tomatoes, thinly sliced 1/4 tsp. salt 1/8 tsp. freshly ground black pepper Cooking Spray (try to use an olive oil-based spray) Instructions 1. In a small saucepan, bring balsamic vinegar to a boil over medium heat and cook until reduced to about 3 tablespoons. 2. While the vinegar is reducing, brush the cut side of the top of bread with olive oil. Top evenly with basil, cheese and tomatoes. Sprinkle with salt and pepper. Eggs In Purgatory

This dish is one that is commonly eaten during meatless meals. In my family, we enjoy this during Lent, typically on Good Friday, or on other various Fridays during the season. It is simply soft eggs in a tangy red sauce. It originated in Naples and then became popular in many other regions. It is simple and delicous! Recipe Ingredients 3 tbs. olive oil 5 cloves of garlic, minced 1 tsp. crushed red pepper flakes 1/4 cup finely chopped onions 1 (28 oz.) can crushed tomatoes 2 tbs. chopped parsley 2 tbs. torn basil 5-6 large eggs Instructions 1. In a large, cold skillet, add olive oil, minced garlic, and red pepper flakes, then sauté for 5 minutes over low heat. Make sure to stir occasionally so nothing burns. Raise the heat to medium high and add onions. Cook for an additional 4 to 5 minutes. 2. Pour in the tomatoes and season with a generous amount of salt. Add the chopped parsley and basil. Tomato Sauce with Tuna

This is one of the easiest and most delicious sauces to make that has a complexity of flavors. It's a seafood kind of take on a classic, zesty tomato sauce. Once you learn the basics of tomato sauce, or how to make a simple marinara, then you can add all kinds of ingredients to alter the flavors. Tuna sauce is a staple during many Christmas Eve dinners or a regular dish in the hot summer months! Recipe Ingredients 11 oz. can of tuna, fresh from can Chopped parsley Salt Pepper Easy Marinara Sauce (see recipe) Instructions 1. Make Easy Marinara Sauce (see my recipe). 2. Add 11 oz. can of tuna to the sauce and let it cook for about ten minutes. You want to add this after the Marinara sauce has been cooking for a while. 3. Add salt and pepper to taste.
